Introduction to Food Safety

This course has been designed to cover the following topics:

  • Legislation;

  • Food safety hazards;

  • Temperature control;

  • Refrigeration, chilling and cold holding;

  • Cooking, hot holding and reheating;

  • Food handling;

  • Principles of safe food storage;

  • Cleaning; and

  • Food premises and equipment.

Introduction to HACCP

The course provides essential knowledge on:

  • The purpose of a HACCP system;

  • The features and terminology of HACCP;

  • How a HACCP system is applied in the workplace;

  • Workplace and personal hygiene and product safety; and

  • Hazard analysis critical control point (HACCP) food safety management systems.

Food Defence & Business Continuity Training

All food businesses need to be prepared for challenges that may threaten their ability to provide continuity of supply to their clients. This training programme is designed to enable owners, managers and supervisors to apply the principles of food defence and business continuity to their businesses. Food Defence & Business Continuity is most appropriate for manufacturing processes and large-scale food operations but is also useful for other food businesses that may be able to apply its principles, such as food franchises and chains such as pubs, hotels and restaurants.

The qualification covers the following topic:

  • Process for implementing and maintaining a Food Defence & Business Continuity system to enable food industry personnel to manage threats to their food business and systematically control the risks to their supply chain.
